Cipolle in forno [Baked onions]
Ingredients

12 red onions
extra virgin olive oil
white wine vinegar
gr 50 grated pecorino cheese
gr 100 breadcrumbs
salt and pepper
Method
Pre-heat the oven to 200°C. Peel the onions, cut two slits to form a cross at the top of each and put them in a baking tray. Brush with oil and season with salt and pepper. Roast in the oven until well baked. Moisten with the vinegar; mix the cheese and crumbs, sprinke over the onions. Return the tray to the oven to evaporate the liquid and toast the bread, and serve.
